Chicken Mu 치킨무 (Pickled Radish for Fried Chicken)


Chicken Mu 치킨무 (Pickled Radish for Fried Chicken)

Ingredients:
1/2 small Korean Radish
1/2 cup Brown Rice Vinegar
1/2 cup filtered Water
1/2 cup granulated White Sugar
1 tsp Salt

Instructions:
Wash, and peel the radish.
Cut the radish into .05” bite-sized cubes, and set aside.
Prepare the pickling mixture.
In a mixing bowl, pour-in the vinegar, and water.
Add-in sugar, and salt; slowly mix well until sugar and salt dissolve.
Add-in the radish, mix well.
Transfer in an air-tight glass container, place in the fridge for 2~3 days to allow the pickling mixture to soak into the radish before serving.
Serve chilled with TongDak (FriedChicken).
