Chocolate Truffles


Truffles are chocolate confectionery made with a chocolate ganache
coated with cocoa powder, sugar powder, toasted coconut, or chopped nuts.

Chocolate Truffles

Ingredients:
6 oz (1 cup) semi-sweet Chocolate Chips
6 tbsp low-fat Milk
pinch of Salt

a drop of pure Vanilla Extract (optional)
1/4 cup Dutch process Cocoa Powder (for coating)

Instructions:
If using the microwave,
In a microwave-safe dish, combine chocolate, milk, and salt.
Heat for 50 seconds. Stirring in 10-second interval until melted.
Remove from microwave, continue stirring until well combined and smooth.
Add-in the vanilla extract if desired, and stir well.

If using the stove,
In a small pan, combine chocolate, milk, and salt.
Heat on low until melted, stirring frequently.
Add-in the vanilla extract if desired, and stir well.

Freeze at least 1 hour, or until chocolate is hard enough to scoop out into truffle shapes. (Alternatively, you can freeze the chocolate in candy molds of fancy shapes.)

With a tablespoon, scoop out the chocolate ganache, and roll out into balls. Roll in your hands quickly (as it will melt from the heat of your hands.)
Place on a sheet pan lined with parchment paper.
Cover loosely and store in the freezer until just before serving.

Roll in cocoa powder, moving the truffle around to coat.
Place the coated truffle in a mini muffin liner or on a parchment lined sheet pan.
Repeat process until all truffles are coated.
Allow to set in a cool dry place for at least 15 minutes; or store in an airtight container in the refrigerator.

Serve and Enjoy!!

Note:
Chocolate Truffles are best when served at room temperature.
Alternative coating for truffles can be sugar powder, finely chopped nuts, or sweetened toasted coconut.
These are good for presents too! Place them in a fancy box then tie with a nice ribbon and you have the perfect gift.^^
