Akoori (Indian Scrambled Eggs)
2 pcs Eggs
1 tbsp Coriander Leaves, finely chopped
1 Green Chili, finely chopped
1 medium Onion, finely chopped
1 small Tomato, finely chopped
1 1/2 tbsp Ghee
3/4 tsp Salt
In a heated pan, add ghee.
Add-in chopped onion and pan-fry until translucent.
Add-in chopped chili, coriander, and tomato.
Mix well and cook for 3 minutes. Remove from fire.
Beat the eggs in a bowl until thoroughly blended.
Add the beaten eggs to the above mixture and stir.
Add salt and keep the pan on fire.
Keep stirring all the time.
Cook over a medium flame until it becomes light and fluffy.
