Soy-Glazed Honey Ginger Salmon



Soy-Glazed Honey Ginger Salmon

Ingredients:
1 tsp ground ginger 
1 tsp garlic powder 
1/3 cup soy sauce 
1/3 cup orange juice (freshly squeezed orange)
1/4 cup honey 
1 green onion, chopped 
1 (1 1/2-pound) salmon fillet 

Instructions:
In a large self-closing plastic bag, combine ginger, garlic, soy sauce, orange juice, honey, and green onion; mix well.
Place salmon in the bag and seal tightly. Turn bag gently to distribute marinade.
Refrigerate for 15-30 minutes.

Preheat an outdoor grill for medium heat and lightly oil grate.
Remove salmon from marinade, shake off excess.
Grill for 12 to 15 minutes per inch of thickness. Glaze the salmon with the remaining marinade.
The grilled salmon is ready when it flakes easily with a fork.

Garlic-Orange Spinach (Side Dish)

Ingredients:
2 tbsp grapeseed oil
1 tbsp garlic, minced
3 tbsp orange juice (freshly squeezed orange)
1 bag (10 oz) fresh spinach, washed and spun dry
1 tbsp grated orange zest
salt and freshly ground pepper to taste

Instructions:
In a large sauté pan, heat oil over medium-high heat.
Add garlic and cook, stirring constantly, until it begins to brown, about 30 seconds.
Add orange juice and cook until reduced, about 30 seconds.
Add spinach and orange zest; sauté until spinach just wilts.
Remove from heat and season with salt and pepper.
