Ggaetnip Kimchi 깻잎김치 (Perilla Leaves Kimchi)

Ingredients:
50 Perilla Leaves (Sesame Leaves), washed and pat dried

For the Kimchi Paste:
2 tbsp Red Pepper Powder
1 1/2 tbsp Fish Sauce (Aekjeot)
2 tbsp Soy Sauce
3 tbsp Water
1/2 Tbsp Sugar
1/2 Yellow Onion, sliced thinly
1 tbsp Green Onions, chopped
1/2 Tbsp Garlic, minced
1 Tbsp Sesame Seeds

Instructions:
Make the kimchi paste.
In a small bowl, add-in all the ingredients for the kimchi paste. Mix well to thoroughly combine. Set aside.
*Adjust the amount of saltiness, sweetness, and spiciness depending on your taste.

On a plate, place one perilla leaf, and spread kimchi paste evenly on top.
*Repeat this process for the remaining leaves.
Stack and arrange them; Place in an airtight clear glass container.
Cover, and put in the fridge, until ready to serve.
*This is best served chilled.
