Zucchini
Chocolate Muffins
Ingredients:
1 cup all-purpose flour
1 tbsp unsweetened cocoa powder
1 cup all-purpose flour
1 tbsp unsweetened cocoa powder
1 tsp baking soda
1/8 tsp baking powder
1/3 tsp salt
2/3 cup sugar
2/3 cup zucchini, grated
2/3 cup sugar
2/3 cup zucchini, grated
1 egg
1/3 cup canola
oil
1/2 tsp
vanilla
1/3 tsp
pumpkin pie spice
Instructions:
In a large
bowl, beat-in the egg.
Beat-in the
sugar and the oil.
Add-in cocoa,
vanilla and grated zucchini; stir to mix.
Add-in flour,
baking soda, baking powder, salt and pumpkin pie spice; stir to mix, just until
moist.
Pour the batter
into prepared muffin cups, about 3/4 full. Bake in a 175ºC preheated
oven for about 20 minutes, or until a toothpick inserted in the middle comes
out clean. Remove from oven and let cool on a wire rack.

(Homemade) Pumpkin Pie Spice
3 tbsp ground cinnamon
2 tsp ground ginger
2 tsp nutmeg
1 ½ tsp ground allspice
1 ½ tsp ground cloves
Store in a small airtight jar or spice container.
