Ingredients:
200 g Beef Chuck or Flank - sliced thinly against the grain

sheets Rice Paper Round

pcs Green Iceberg Lettuce Leaves

pcs Sesame Leaves

pcs Pickled Radish

small Carrot, julienned
Pickled
Cucumber, sliced
1/2
Yellow Sweet Pepper, julienned
1/4
Yellow Onion, sliced
Vietnamese Dipping Sauce (see recipe below)
Peanut Dipping Sauce (see recipe below)
1 tsp Soy Sauce
1 tbsp Olive Oil
1/2 tsp Garlic, finely minced
1/2 tsp Sugar
Salt and Black Pepper
Instructions:
In a small bowl, whisk together soy sauce, olive oil, sugar, and garlic.
Season with salt and black pepper.
Add-in beef, toss to coat, and set aside for 10 minutes.
Pan-sear in a lightly oiled pan, stirring until just done, about 30 seconds, or until desired doneness.
Place all the ingredients in a plate.
Prepare a deep large bowl deep enough to dip filled with water. Immerse an individual sheet of rice paper round into a bowl of water, and remove only a few seconds; leave it on a towel for about a minute to soften. (It’s ready for wrapping and rolling when it’s pliable and slightly tacky.)
Place lettuce leaf on the center of the rice paper, top with sesame leaf, pickled radish, carrots, sweet pepper, onions, pickled cucumber, and beef. *Don't over stuff or the roll may burst, just have a bit of each ingredient for the flavor.
Fold in the two side flaps, and then fold up one-third of the paper over the filling.
Arrange the beef rice paper rolls on a platter, and serve with dipping sauce.

Homemade Peanut Dipping Sauce
Ingredients:
1/4 cup Hoisin Sauce
1 tbsp natural Peanut Butter
1 tbsp Rice Wine Vinegar (optional)
1 tbsp filtered Water
Instructions:
In a small bowl, place all the ingredients for the dipping sauce. Stir well to combine.
Serve with Rice Paper Rolls.

Homemade Vietnamese Dipping Sauce
Ingredients:
1 tbsp Fish sauce
1 tbsp Lime Juice or Lemon Juice
1 tsp Rice Vinegar
2 tsp White Sugar
1/2 small clove Garlic, finely chopped
1 small red Chilli, seeded and finely chopped
Instructions:
In a small bowl, place all the ingredients for the dipping sauce. Stir well to combine, until sugar dissolves.
Serve with Rice Paper Rolls.
